Ridiculously tasty rocky road

I really love watching Zoella videos and she did an Easter Treats baking video so I felt inspired to make rocky road. I can’t believe I have never made rocky road before as I am an avid baker so I thought it was about time to do so! The recipe she used looked sooo good that I have taken inspiration from it but I changed a few things. I was really craving Maltesers so I added them in. You can add whatever you like really – its your choice! I think rocky road is so great because you can get little gems of mystery in every bite. I bet lots of people have got chocolate lurking in the house just waiting to be melted! You might even have some Easter eggs that need eating. I have to admit I’m still eating my Christmas chocolate! Plus I had loads of chocolate left from a chocolate tasting challenge blog I did recently with some friends – such a great day! Anyway, I hope you enjoy this recipe. Recipe

150g unsalted butter

200g milk chocolate

200g dark chocolate

4 tbsp golden syrup

150g digestive biscuits broken into bite sized chunks

180g big marshmallows (although you can use mini ones), chilled

100g white chocolate chunks, chilled

250g Maltesers, chilled

Decoration

100g white chocolate

Equipment:

large baking tin

Method

  • First thing to do is pop the marshmallows, white chocolate chunks and malteasers in the fridge. This will help combat the heat of the melted chocolate later.
  • Melt the butter on a low heat in a saucepan.
  • Add the milk chocolate and dark chocolate to the pan, along with the golden syrup.
  • Stir and heat until melted.
  • Poor the chocolate mixture into a large bowl and leave to cool for 10 minutes. I find using a spatula my savour for getting every last bit of chocolate out of that pan. If you don’t own one, I would definitely recommend investing in one!
  • Add the crushed digestives, Maltesers, white chocolate chunks and whole marshmallows to the chocolate mix. The marshmallows must be whole, otherwise they will just stick to each other and everything else basically! You want to have an even dispersion of them in this! Stir until well combined.
  • Transfer to a lined baking tin, drizzle with melted white chocolate and leave in the fridge to set for a few hours until ready to cut into snack sized pieces.

These are so unhealthy but if you share them its not so bad! They are super quick to make and perfect for when friends are coming round and you want to offer them something sweet to munch on.
