Breakfast made easy: chocolate overnight oats

Overnight oats are becoming really trendy at the moment. From Lauren Conrad to Ella Woodward, there are so many celebrity fans of the easy and delicious breakfast! I have a sweet tooth and wanted to create a chocolate flavour overnight oats. I’m sure there are better, healthier recipes but this is more of a Sunday luxury feeling recipe. Healthier alternatives would be banana and honey, peanut butter and honey, coconut milk and pineapple chunks….

Its so quick, you just mix everything together in a bowl and put in the fridge overnight! Done! You can top with fresh fruit such as banana and things that will go brown if prepared ahead of time. Or add texture for extra crunch such as dried banana chips! Its such a tasty yet luxurious breakfast and great for the up and coming spring months. The oats in the recipe act as a slow releasing food. Be brave and make your own flavours. Once you have cracked the liquid to oat ratio just play around with the additional flavours. And its not set in stone, it can be as runny or thick as you like it! Why not try things like raisins, vanilla, yogurt, seeds and nuts in it? How about apple and cinnamon flavours? You can do what you like!

Recipe (serves 2)

80g oats

160ml semi-skimmed milk (if not use soya, hazelnut or coconut milk)

1 tbsp cocoa powder

2 tbsp runny honey

½ tbsp. cinnamon

2 tbsp chocolate chips (optional – healthier alternative is raisins!)

Equipment:

Bowl and a tub to store the mix in overnight

Method

  • Mix all the ingredients in a bowl under well combined.
  • Store in a container in the fridge overnight, making sure the oats are covered.
  • Top with fresh/dried fruit or a little nuts if you like!

This is so tasty and a great new “beat the morning rush” start to the day. You really have to try this; it is my yummy new discovery! What do you put in your overnight oats?
